7 Easy Meals for a Busy Week

We are almost done renovating our house and have been spending every evening and weekend at a house with no functioning kitchen trying to get our house ready to move in! We have definitely been doing our fair share of eating out but with a little planning and preparation, I can have dinner ready at home every evening and save us some money.
These are some of my go-to easy meals that I’ve been really relying on during this very busy season when I don’t have a lot of time to spend in the kitchen. Many of these are slow cooker meals that I can prepare in the morning or afternoon and will just be ready to go whenever we have time to eat in the evening.
1. Slow cooker chili

There are so many amazing slow cooker chili recipes out there and it’s a very versatile dinner. I love this classic crockpot chili recipe from The Frugal Girls. I like to make a batch of cornbread as a side for this one. If you’re looking for something a bit different, my family also enjoys this slow cooker white chicken chili recipe from The Magical Slow Cooker. We enjoy white chili with tortilla chips.
2. Mississippi chicken

Mississippi chicken is another slow cooker meal I can throw in my crockpot in the morning and forget about until dinnertime. This recipe from The Country Cook is so simple and delicious and only requires a few ingredients! We enjoy this chicken served over white rice in our home.
3. Chicken wraps
My secret to quick, easy chicken wraps is…frozen chicken nuggets! Simple warm your chicken nuggets in either the microwave or oven then put together your wrap with a tortilla, cheese, lettuce, onions, mayo, ranch, or any other toppings you enjoy.
4. Slow cooker Mongolian beef
This slow cooker Mongolian beef recipe from the Slow Cooker Meals blog is soooo tasty! This one does require a little bit more and ingredients but if I take the time to prepare this in the morning, it is so worth it when dinnertime rolls around. This is another one we enjoy served over white rice.
5. Hawaiian haystacks
Another slow cooker meal that comes in clutch on those crazy busy days! I love this easy recipe from the I Heart Naptime blog. I feel like the minced onion in this recipe really levels up the flavor. Serve with rice and whatever toppings your heart desires. This is a crowd pleaser for sure.
6. BBQ chicken sandwiches

I made BBQ chicken sandwiches the other night and they were amazing! The chicken spends the day getting perfectly done in the slow cooker. We served it on brioche buns with coleslaw and, oh boy, my mouth is watering just remembering it. This recipe from Instrupix was *chefs kiss*.
7. Creamy Italian chicken
Growing up, we had creamy Italian chicken a LOT because my mom didn’t like alfredo. I was thrilled to find an easy slow cooker recipe from Life in the Lofthouse so I can have it ready at the end of the day when I am exhausted and burnt out. Serve this over rice or pasta and with a side of garlic bread or veggies and you have the perfect dinner!
These are the meals we have had on rotation the past few months since we have been spending every evening and weekend working on renovating our new house! Honestly, some nights I turn to frozen pizza or lasagna or even a drive-thru fast food place but I’d so much rather have a homecooked meal ready for me when we get home at the end of a long day!
